OK...here we go....I need Monkey help!!  I never make New Years Resolution casue I never keep them.....but this year I did make one....and with your help and hat of my family and friends I will keep it.

I vowed to lose 10lbs. in the next 2 months...without starving....

So I need some good low cal, low carb, low sugar recipes....with FLAVOR!!! And something besides salads.

I will start a new thread in  recipes but thought I'd go ahead and share one here that I have reworked..


Red Beans and Rice
Mama knows best! This New Orleans-style one pot meal is hearty, tasty, and healthy!

T = tablespoon
t= teaspoon

INGREDIENTS
2 T canola oil (I spray a non stick w/Pam and use 1 T oil)
1 large onion, diced
1 yellow or red pepper, diced
2 cloves garlic, minced
1 bunch green onions, sliced, green part reserved for garnish
1 lb. turkey smoked sausage
3 (15 oz) cans of kidney beans - I use the small kidney beans
1 ( 14.5 oz) can diced tomatoes with basil and garlic
1/2 t red pepper flakes or more to taste...I do more
1 T oregano, dried flakes
1 t thyme, fresh or a pinch dried
1 bay leaf, whole
1 pinch salt
1 t black pepper
1 c brown rice
1 c water

DIRECTIONS
Slice sausage in half lengthwise and then in half again. Cut crosswise to dice. Heat oil in a large dutch oven or heavy saucepan. Once hot, add onions, diced pepper, garlic, and white parts of green onion. Cook until tender. Add sausage. Cook just until browned. Add spices, beans, and tomatoes. Stir to combine. Add rice, stir to combine and cook for 1 minute to coat the rice. Add water. Bring to a boil and immediately reduce to a simmer. Cover and continue to cook for 25 minutes or until rice is tender. Remove bay leaf before serving. Finish with  sliced green onions and hot sauce on the side

Klaas,
I asked the kids but they don't know for sure how old she is...I'm guessing 6-8 weeks.

She has been named snowball.  (They didn't ask my opinion.)

She went home a little while ago.  I think I miss her!  But I'm sure I'll get to babysit occasionally!
And like Sunny said, then I can spoil her and send her home.




All the puppies there are cute!  So glad she got home before she became a Scooby Snack!

Yep...but it's lower than the good stuff!  And the recipe should equal about 12 - 1 cup servings...any idea what to use besides turkey sausage?  venison sausage perhaps?

lol Nut - I was going to make my first attempt to embed a YouTube video in my Aussie thread but was unable to find the directions after searching for a short while.  Just as well as I see I can still have trouble staying out of the quote boxes. (Thank you Klaas).

I was in the supermarket a couple months ago and saw turkey sausage and was about to put it in my cart (I don't eat breakfast meat, but only because of the calories and salt, not because I don't like it) and stopped dead when I read it was 220 calories a sausage.  So, I am still in sticker shock.

I would love to do this with you.  Right now I am on a money diet and can't afford food, anyway.

I don't know about you guys, but I think this New Year thing wasn't well thought out! Who ever heard of birthing anything when it's this cold outside?!
