** I use vegetable oil, not shortening and ANY brand of biscuit mix will work...oh yes, and the NUT's are optional   

JIFFY BANANA NUT BREAD

1 c. sugar
1/4 c. shortening
2 eggs
3 crushed ripe bananas
2 c. Jiffy baking mix
1/3 c. chopped nutmeats

Cream sugar and shortening. Add eggs and crushed banana. Add Jiffy baking mix and nuts. Stir until well mixed. Pour batter into a well-greased and floured 9x5x3 inch loaf pan.
Bake about 55 minutes in preheated 350°F oven. Remove from pan. Cool on rack before slicing.

Hi Nut!

I tried your easy banana bread, it turned out excellent! 

I used a glass, instead of metal, and it took a little less time, than on the recipe.

I mixed all the ingredients with a hand electric mixer, I did not use two bowls, and it
turned out wonderful.  I also did not crush the bananas, I chopped the bananas and the
electic hand mixer, did the job for me.

Next time, I will add walnuts meats in the batter.
