Happy First Full Day of Spring!

Picked these from the side of the house yesterday! There's hope that the Winter weather is coming to an end.

This Winter has been a bit rough on me. I am not a Winter person! So happy to see signs of Spring!

Hi GE - thanks for asking.  My niece is doing quite well.  Her eprex injections, along w/iron have raised her hemoglobin levels from 90 to 101 to 133 which is in the normal range, so she is feeling stronger.  Also she is motivated to take care of herself with a renal diet.  We have been attending evening workshops.  Facilitators include someone from the kidney foundation, a nurse, dietician and social worker.  Learning about renal diets and cooking meals accordingly. The group have exchanged emails so there will be a support system in place for her with other chronic kidney disease sufferers after the group ends.  One lady wants to meet with us at a pastry/coffee shop when sessions end.  (Coffee and pastry, apart from homemade, are no no's.)

My brother has begun a day program twice a week as recommended by his stroke team.
He keeps telling me he wants to come down for a week.  He has a real bee in his bonnet.  Truly didn't ever expect him to be strong enough to make the trip again.  Have told him that when he is ready, we will pick him up.  So, we shall see. 

Mom is doing well.  In fact we are off to meet our out of town cousin today for lunch at a casino.

WOW Can that is great news about your niece. It sounds like you are the one to take her to the doctors etc. What a wonderful Auntie. I am sure you gladly do it now she has made the decision to take care of herself. Prayers your brother gets strong enough to make the trip to come see you. Making that a goal I would think will help him get stronger. Hope you had a great time at lunch with your cousins.

We are maintaining here. It seems we have gone straight from winter to summer.  Monkey Devil! I was informed we are having youngest grandsons birthday here.  Monkey Devil!  So grandma can make his birthday dinner. I don't thing daughter wanted to make Easter dinner this year. As his birthday falls on Easter Sunday. I told her at Thanksgiving I was turning over the cooking reins for holiday meals. I had been doing it for 45 years.

Brother is enjoying his day program.  Says all the folks and volunteers running the program are so nice.  Think he is enjoying the fuss they are making over him.  Also he knows four people in the program from years of living and working in a small town.
His wife does not want him to visit us and thinks he needs too much watching over.  I know it is a responsibility i. e meds, insulin etc.   We shall see.  He has been coming here for years and loves to come.  Won't refuse him, but in accordance with his wife's wishes, won't encourage it either.

Yes, I do attend niece's appointments with her, since she has no other relatives nearby except
her Granny.  

Funny how the family holiday meals always end up in our laps.  So much for your announcement to pass it over to the younger ones.  After 45 years of Mom's great cooking,
no wonder they don't want it to come to an end.  Happy Birthday to your grandson.  Has he put in his order for his bday dinner yet?

Good choice! and easy on Grandma.  Don't know too much about nacho chesses.  I buy the Tostito brand in a jar.  Hubs has recently discovered he loves to dip melba toast or hot crunchy ciabatta bread into it.

Wish me luck today.  I am going to try to take my Mother's husband to the dentist today.  He has had tooth pain and has a tooth broken off to the gum.  Told him last week I would be taking him to the dentist today.  He insisted there is nothing wrong with his teeth and he would not go.  (he cannot remember the times his tooth was bothering him).  Asked nursing home for a staff escort but they refused.  Hubs is coming along with me.  I doubt we will even be able to get him out of the nursing home
but will give it our best shot, and hope he doesn't become aggressive.

I did a cottage roll with potatoes, carrots, onions and cabbage.  Meal in a pot.   It was exceptionally lean.  Hubs made a fresh apple strudel.  Warm w/whipped cream.  Lord, why
am I always thinking of food.

My grandmother use to make something like that when I was a child. I find it fascinating how different areas differ in their food choices. Hope the family's doing well. an angelic monkey

Personally, I have never heard of a cottage roll.

Had to look it up: A cottage roll or cottage ham is one that is cut from the end of the shoulder but end, commonly known as shoulder butt or as a cottage roll. It is soaked in brine.

I am willing to bet it is more popular in Canada than the US. I'll ask my Canadian husband when he gets home this evening.

I have used corned beef instead of ham with cabbage, potatoes, onions and carrots. Probably a similar dish.
