This is the one I had made over the winter. Yummy!! I copied it from the site when I made it, instead of saving the whole link
But I'll find it!
I also couldn't find leek soup, so I think I used mushroom.
* 8 ounces penne pasta
* 1 tablespoon olive oil
* 1 large onion, chopped
* 2 stalks celery, chopped
* 1 red bell pepper, chopped
* 2 cloves garlic, crushed
* salt, to taste
* ground black pepper, to taste
* 1/4 cup sherry
* 1/2 pound kale, stems removed and leaves coarsely chopped
* 1 (14.1 ounce) can potato leek soup
* 1 cup vegetable broth
* 1 (6 ounce) can tuna packed in water, drained
* 1 cup shredded mozzarella cheese
* 1/3 cup herb seasoned bread crumbs
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 2 quart casserole dish.
2. Bring a large pot of salted water to a boil, add penne pasta, and cook 10 minutes or until al dente; drain.
3. Heat the oil in a large wok or skillet over medium-high heat. Mix in onion and cook 5 minutes. Stir in the celery and bell pepper and continue cooking for another five minutes. Mix in the garlic, salt and pepper and continue cooking 3 minutes. Pour in sherry; stir in the kale and cover. Reduce heat to medium and cook for 5 minutes, stirring occasionally, until the kale has wilted.
4. Transfer wok mixture to a large bowl. Mix in the cooked pasta, soup, vegetable broth, and tuna. Pour mixture into the prepared casserole dish. Top with a layer of mozzarella followed by a layer of bread crumbs. Bake uncovered in the preheated oven for 25 minutes.

I am pizzed today. I pick up Josef and notice the Ford car lot across the highway has the flags flying half staffed I guess for Uncle Teddy K. Funny thing is, the Kawasaki shop didn't have theirs lowered.
I'm absolutely nuts inside today, and now my husband is babbling about they are going to put Ted Kennedy's name on the health care reform bill and it will be easier to pass. I don't know where he is getting this crap from, oh yea, MSNBC. Why would Ted Kennedy's name on the bill help? I'm confused like usual.
They want to put his name on it because he has always been for "healthcare reform", but now they have one less vote in the Senate. So his untimely demise may work out for us after all.

You are welcome! I never had kale until last winter. My FIL had given us a bunch from his garden the end of summer, and I was like what do I do with this? And I found the recipe somewhere. It was pretty dang good!
There was a bunch for kale, but I had used all we were given, and it's not very popular at small town grocer's. But the chips sounded really easy. I think it was just spraying a pan with Pam, some seasoning salt and bake for 10 minutes, or close to that...

When I was in my recipe box for the sweet and Sour recipe (yup most of mine are still on recipe cards) I found this one that I make for potlucks all the time. It is so good and easy!
Lazy Man Perogies
Filling #1 - 2 cup cottage cheese, 1 egg, onion salt
Filling #2 - 1 cup cheddar cheese, 2 cup mashed potatoes, 1/4 tsp salt, pepper & onion salt
Cook lasagna noodles according to package
In a 9 x 13 pan layer:
noodles
Filling #1
noodles
Filling #2
noodles
Saute 1 cup chopped onion in 1 cup butter. Pour over top, Bake 30 minutes at 350.
Serve with source cream and crumbled fried bacon.

Tevye - earlier you were talking about Liver. Other than the fact that I LOVE liver with gravy and onions and bacon and mashed potatoes with fresh garden carrots in butter, wondering if you are eating it to get your iron up in your blood? If that is why, there is a easier way if you do not like liver - Black strap molasses. 1Tbsp in a glass of water and drink. My mom has been doing it for years and her doc told her it was the best way for woman to ensure they are not anemic. It is also a good way to get iron into kids who will not touch liver.

i did but i cut down the amount...don't have many tupperware/saving freezing containers but i'm trying to build up...most of the time the ones i have are being used. slowly but surely.

LOL my recipe box is red and white gingham. My mom still makes perogies from scratch the long way. I love her cottage cheese and dill ones or her sauerkraut ones. This is so good and fast and tastes nummy!

* 1 red bell pepper, chopped
* 2 cloves garlic, crushed
* salt, to taste
* ground black pepper, to taste
* 1/4 cup sherry
* 1/2 pound kale, stems removed and leaves coarsely chopped
* 1 (14.1 ounce) can potato leek soup
* 1 cup vegetable broth
* 1 (6 ounce) can tuna packed in water, drained
* 1 cup shredded mozzarella cheese
* 1/3 cup herb seasoned bread crumbs
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 2 quart casserole dish.
2. Bring a large pot of salted water to a boil, add penne pasta, and cook 10 minutes or until al dente; drain.
3. Heat the oil in a large wok or skillet over medium-high heat. Mix in onion and cook 5 minutes. Stir in the celery and bell pepper and continue cooking for another five minutes. Mix in the garlic, salt and pepper and continue cooking 3 minutes. Pour in sherry; stir in the kale and cover. Reduce heat to medium and cook for 5 minutes, stirring occasionally, until the kale has wilted.
4. Transfer wok mixture to a large bowl. Mix in the cooked pasta, soup, vegetable broth, and tuna. Pour mixture into the prepared casserole dish. Top with a layer of mozzarella followed by a layer of bread crumbs. Bake uncovered in the preheated oven for 25 minutes.

i did but i cut down the amount...don't have many tupperware/saving freezing containers but i'm trying to build up...most of the time the ones i have are being used. slowly but surely.
