Mere - is this it?


2 1/2 c. sugar
3/4 tsp. salt
1/2 stick butter or margarine
1 5 oz. can evaporated milk 
1 Jar (7 1/2oz) Marshmallow Creme
3/4 tsp. vanilla
1 12-oz. package semi-sweet chocolate pieces
1 /2 c. chopped walnuts
 
Grease a 9-inch square baking pan; set aside. In large saucepan combine the first 5 ingredients. Stir over low heat until blended. Increase heat to Medium and bring to a full-rolling boil being careful not to mistake escaping air bubbles for boiling. Boil slowly, stirring constantly for 5 minutes (use Soft-Ball test). Remove from heat, stir in vanilla and chocolate until chocolate is melted. Add nuts. Turn into greased pan and cool. Makes 2 1/2 pounds.

Hint: As with all fudge recipes, cooking time will vary depending on factors such as humidity and altitude. For best results, use the softball test to make sure the fudge has been cooked enough.

And this is the original Fantasy Fudge recipe off the back of the Marshmallow Creme jar, varies just a little from the above:


3 cups sugar

2/3 cup evaporated milk
1 12-oz. package semi-sweet chocolate chips
1 7-oz.  jar Kraft Marshmallow creme
1 cup chopped nuts
1 teaspoon vanilla extract

Traditional method:
Combine sugar, margarine and milk in heavy 2-1/2 quart saucepan; bring to full rolling bail, stirring constantly. Continue boiling 5 minutes over medium heat, stirring. Remove from heat, stir in chocolate till melted. Add marshmallow creme, nuts & vanilla beat till blended. Pour into greased 13 x 9-inch baking pan. Let cool and cut into 1-inch squares.

Mere I found this recipe in my trusty "America Cooks" recipe book which has recipes from the General Federation of Womens Clubs edited by Ann Seranne (I think CBB may have found a copy of this book also).  My copy is dated 1987 but I still use it often as it is in ounces and cups rather than the metric measures we have here now.

MAMIE EISENHOWER'S FUDGE

4 and 1/2 cups sugar
2 tablespoons butter
Dash of salt
14 and 1/2 ounce can evaporated milk
12 ounce package semi-sweet chocolate pieces
12 ounce package sweetened chocolate, broken up.
1 pint marshmallow cream
2 cups chopped walnuts or pecans.

1. Grease a 13 x 9 and 1/2 x 2 inch baking pan well.

2. In large saucepan combine sugar, butter, salt and milk.  Bring to boil over medium heat, stirring constantly.  Boil for 6 minutes, stirring occasionally.

3. Put semi-sweet and sweetened chocolate, marshmallow cream and nuts in mixing bowl; pour in syrup; beat until chocolate is melted.

4. Pour into pan; cool for several hours, or until firm.  Cut into squares.  Store in airtight container.

   Makes about 5 pounds

Klaas, I started this topic (4-year-old boy vanishes from Newburgh apartment 12/14/09 NY) but now realize I never put Marc's name in the title (I had copy and pasted it from the first article I posted). Bringing this over too:

 an angelic monkey  Nutt thank you for fixing the title. It looks so much better now. I can't believe I didn't even notice it until yesterday! Well, now they just have to find little Marc. Little 4yr old boys don't just walk off and disappear into the sunset.

Tibro....thank you so much for the fudge recipe....when you have one named
"Mamie Eisenhower", it should be the right generation for my Mom's fudge, and now I realize that all of them have evaporated milk in the recipe....so I am going to try two over the holidays.  Will let you know.....
