I usually do pigs in a blanket and veggies and dip.  My extra secret pig in a blanket recipe.  Breakfast sausages and regular size pillsbury crescent roll dough.  Wrap raw breakfast sausages in a triangle starting at large end.  Cut wrapped sausages in half and place on baking sheet.  Bake at 10 degrees less then dough package says so the sausages get cooked and until dough is golden brown and viola, serve with raw veggies and dip!

Haha the hard part is my meds r immune to candy bars.... hard not to eat them! haha man they are good. but i have been good today, not even one yet!

In a large bowl, mix the roma tomatoes, sun-dried tomatoes in oil ( uyou loose the favour if you just get the dried tomatoes not in oil) , garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes. Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown. Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
Broil for 5 minutes, or until the cheese is melted.

Bean Salsa

1  can black-eyed peas
1 can black beans rinsed and drained
1 can whole kernel corn drained
3 chopped green onions
1/2 cup chopped green bell pepper
2-4 diced jalapeno peppers
2 large tomatoes diced
2 cloves garlic minced
1 cup Italian-style salad dressing

Mix in a bowl , cover and refridgerate over night.  Serve with your favourite corn chips.

Thank you for posting this recipe Northern Rose - I have had a craving to make this lately - I have never made it myself so now I have a trusted true recipe 

It is SOOOOOOO good.  The tomatoes must be packed in oil and the fresh basil makes a huge difference.  If you can not find fresh basil,  dried does works but there is a falvour difference.  You can top with shredded mozza instead of the slices and that works out the same.

Coconut Shrimp

1 egg
1/2 cup flour
2/3 cup beer
1 1/2 teaspoons baking powder

1/4 cup  flour
2 cups flaked coconut

24 shrimp
3 cups oil for frying


Mix first 4 ingrediants in a bowl.  Place 1/4 cup flour and coconut in two separate bowls.
Hold shrimp by tail, and dredge in flour, shaking off excess flour.
Dip in egg/beer batter and let excess drip off.
Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes.
Heat oil to 350 degrees F  in a deep-fryer or heavy pot .

Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. remove shrimp to paper towels to drain.

Serve warm with dipping sauce:

Mix
1/4 cup orange marmalade,
1/2 tsp mustard
horseradish to taste
