I use Bob Evans mashed potatoes...just heat them up in the micro..they are the bomb!
I have not peeled a potato since and I never will again!

They are good! We use them often at the office when we're fixing lunch. They even have the occasional small lump, which I like!! YUM!!!

I'll ... peel... my eye for the kind of potato.

The potatoes I have are large, but not the baking kind. I grab them at the store without even looking which kind they are... kinda grabbing whatever is a good buy.

I use the hand mixer, a suggestion of Alton Brown last year... haha!

The thing is that sometimes they come out fine.

But, will put more attention to the type of taters from now on.

I see you have gotten good advise....use russet potatoes, cook til fork tender, drain and put back in the same pot to ensure all the water has evaporated. I use a hand masher if just making for DH and me....a hand mixer has always made mine gummy, I used 1/2 butter and 1/2 cream cheese and half and half.....until  we are more conscious of fats, now I use whipped butter and low fat cream cheese and fat free half and half. I think adding a little at a time is best. My DH likes some small lumps.

Speaking of Bob Evans mashed potatoes, I have this recipe in my oven right now - it looks yummy and I hope it is!

Quick Reuben Casserole By: Bob EvansŪ 

Ingredients
1 (24 ounce) package Bob EvansŪ Mashed Potatoes
2 eggs
1/4 cup milk
1/3 pound thickly sliced corned beef cut into 1/2 inch pieces (available at grocery deli)
1 (14 ounce) can sauerkraut, drained
1 tablespoon spicy brown mustard
1 cup shredded Swiss cheese, divided

Directions
1.Preheat oven to 400 degrees F. In large bowl, stir together potatoes, eggs and milk until well combined. Stir in corned beef, sauerkraut and mustard. Set aside 2 tbsp. of cheese. Stir in remaining cheese into potato mixture. Pour into a greased 8x8 inch oval baking pan. Top with 2 tbsp. cheese. Bake 15-20 minutes or until top is golden.

Leroy..that casserole sounds yummy! only thing is that I don't like sauerkraut..wish I did..makes me sick to even smell it...

For some reason I have been on a sauerkraut kick...maybe because I've been visiting alot of German towns lately.  But I bet this recipe is good without it...it would be like having mashed potatoes with a thicker consistency with cheese and corned beef.  I will let ya know what I think about it as soon as its done!

I also made my cheesy ham and potatoes just in case it turns out gross     

Always need a back-up plan!

yes! let me know how you like it..I love German food..all except sauerkraut...
my father made me eat it when I was a child ...I gagged all the way through it and then threw up for days afterwards... I was sooooo sick from it...could never bring myself to eat it again...
